Open crumb with irregular pockets make this bread ideal for boulliabase toast. Also works well with tapenades and herb oils that can fill in the open pockets of crumb.
Pain de campagne – rustic sourdough made with wild yeast, bright and acidic yielding a tighter crumb. Also great with fatty things due to its acidity. This bread would fare well toasted with rillettes. 85% organic whole wheat.
Potato rosemary – distinctly flavorful, studded with red potatoes mashed into the dough with garlic confit and rosemary.
Pain siciliano Similar to the pugliese maybe due to its Mediterranean origin. This bread is 50% semolina with the addition of grapeseed oil, sweetened lightly with sorghum yielding a softer crumb.
“Flatulence of the Devil” 100% organic with caraway, maple, cocoa and grape seed oil.
Spent grains with sunflower seed – made with wild yeast and “spent grains” from Smith and Lentz beers, we added sunflower seeds and maple for a hearty, nutty flavor profile. This bread stands tall as pain perdue or as avocado toast.
Sweet potato- a lean dough made with mashed yams for flavor and mouthfeel. Long slow ferment yields irregular cell structure in the crumb with hints of nutmeg and black pepper.
Swedish Limpa- 40% rye scented with cardamom, fennel seed, anise seed, orange and sorghum. Shows well as French Toast for Sunday brunch.
Sam Tucker is opened Village Provisions & Bakery in spring 2015. Sam descended from German wheat farmers who settled in Tennessee. When he was introduced to baking at 19, he says he found ‘home’. Over the years, he’s worked under both French and Austrian culinary masters. As executive pastry chef, Sam has shared his talents with some of Nashville’s best restaurants including Wild Boar, Watermark and Burger Up. Most recently he served as opening Chef de Cuisine at the 404 Kitchen.
Opening Village Provision & Bakery is one of Sam’s lifelong dreams. He’s excited to offer artisan breads, prepared foods and pastries for Nashville customers.
